    Step 4: Distillation

    The wash is distilled twice in our copper pot stills. During the first distillation the alcohol vapour condenses into a liquid of approximately 25% abv, known as low wines. These low wines are then collected in a receiving vessel before being transferred into a spirit still, where a second distillation produces the new spirit, which is approximately 70% abv.

    This is where the skilled art of the Stillman is used to select the ‘heart of the spirit’ – the highest quality of alcohols at around 70% abv, which he then channels into one of our special holding vats, known as spirit receivers.

    The spirit that the Stillman does not select – known as foreshots and feints – are returned for distillation, whilst the accepted heart of the spirit is reduced with water to 63.5% abv.
